Italian Sausage Tomato Soup

Rich, spicy soup. Tastes best when made with home made chicken stock.



Ingredients Needed For Italian Sausage Tomato Soup
1 lb Italian Sausage (roll)
2 tbsp Olive oil
4 tbsp Onion, minced
1 cup Carrots, diced
2 stalks Celery, diced
1 can, 28 oz Crushed tomatoes
5 cups Chicken stock, seasoned
2 tsp Parsely
2 tsp Basil
1 tsp Garlic powder
to taste Salt & Pepper
1 cup Ditalini pasta
1/2 cup Parmesan cheese, grated

Directions To Prepare Italian Sausage Tomato Soup
1. Heat broth until simmering. Add spices and onion and continue to simmer for 10 minutes stirring occasionally.

2. While the both is heating, brown the sausage in the olive oil, crumbling as it cooks.

3. Mix the crushed tomatoes in with the broth and bring to a simmer, stir occasionally continuing to heat for 15 minutes.

4. Add the sausage to the soup and simmer on low for 20 minutes.

5. Mix in the diced carrots and celery. Keep at a low simmer for 15 minutes.

6. Stir in ΒΌ cup Parmesan cheese until well blended.

7. Cook pasta according to directions.

8. Serve soup over pasta and top with some of the remaining Parmesan cheese.
