Peanut Butter Cookie Bars

Rich, delicious cookie bars that are easy to make. Use either vanilla extract or cocoa powder depending on personal preference for taste. Store in a sealed bag to retain moistness over time, if they last long enough to need it! Great for snacking, lunches, or dessert topped with whipped cream.

Ingredients Needed For Peanut Butter Cookie Bars
6 tbsp melted butter
1 cup dark brown sugar
1/2 cup peanut butter
1 large egg
1 cup flour
1/8 tsp baking soda
1/4 tsp baking powder
1 tsp vanilla extract
1 1/2 tsp cocoa powder

Directions To Prepare Peanut Butter Cookie Bars
Spray an 8- or9- inch square baking pan with non-stick spray. Heat oven to 350°.

1. In a mixing bowl with electric mixer, beat melted butter, brown sugar, and peanut butter until smooth and creamy.
2. Beat in the egg and vanilla.
3. Slowly beat in flour, soda, and baking powder. Add vanilla extract and/or cocoa powder.
4. Spread/pat evenly in the baking pan (use a spatula sprayed with non-stick cooking spray to even out surface without sticking) and bake for 20 to 25 minutes
