Low Calorie Veggie Soup

This soup is very low calorie, with no fat. Great to keep on hand for afternoon snack or add a protein to it for a main course.



Ingredients Needed For Low Calorie Veggie Soup
64 ounces Organic Vegetable Broth
2 cups White Wine
1 large Onion
2 Leeks
5 Carrots
1/2 Green Cabbage
2 Yellow Crookneck squash
2 Tbls Tarragon
1 Tbls Salt
1 teas Pepper
1 bottle Saffron Threads

Directions To Prepare Low Calorie Veggie Soup
Put Liquids in large pot. With Cuisinart slicing blade, slice leeks and cabbage. With grating blade, grate rest of veggies. Put all veggies in pot and turn stove on to Hi heat. Add water to cover the veggies. Add Spices. Bring to boil and turn down to Med-Hi for 30 min with lid on. Keep eye on it and stir. Turn down again to Low for 1.5 hours with lid on. Taste broth for balance add salt to taste. When time up take off stove and with wand blender, blend till smooth using an up and down motions to grind things at bottom.

Protein options for this soup are portuguise sausage, chicken breast, lamb shanks, keilbasa.

Other Spice options (instead of tarragon and saffron)are
1. Fresh basil and oregano (add italian sausage for protein)
2. Cajun Spice and tabassco (add anduoii sausage for protein)
