Spinach Avocado Soup

Ingredients Needed For Spinach Avocado Soup
1 tbsp butter
1 small onion, minced
2 tbsp all purpose flour
2 3/4 cup vegetable broth
5 cups fresh shredded spinach
1 cup Calavo® Avocado Pulp
1/2 lemon, juiced
1 1/2 cups milk
1/2 tsp salt and pepper
1/2 tsp fresh cilantro
pinch garlic powder

Directions To Prepare Spinach Avocado Soup
Melt butter in a large saucepan.
Add onion and sauté until soft and translucent.
Add flour and cook until it becomes a pale straw looking color.
Add vegetable stock slowly and simmer for 10-12 minutes.
Add fresh spinach leaves. Cook until tender.
Add in mashed avocado pulp and half the lemon juice to the spinach and heat pulp through.
Place all ingredients into a food processor and blend or if you prefer a chunkier soup, pass soup through a colander pressing with a spoon to get all of the flesh through.
Return processed mixture to the pan and add milk.
Reheat slowly; add salt, pepper, remaining lemon juice, half of the parsley or cilantro and garlic powder, if desired.
Serve immediately with a swirl of yogurt or sour cream, and fresh parsley or cilantro.
