Venezuelan Corn Cakes - (Cachapas)

Ingredients Needed For Venezuelan Corn Cakes - (Cachapas)
* 1 can sweet corn cream style
* 1 med Onion chopped
* 1 stalk celery diced
* 1 sm red pepper diced
* 1 cup long-grain white rice rinsed and drained
* 14 oz vegetable broth
* 1 qt Half-and-half
* 1 x vanilla bean, seeds of
* 2 x cinnamon sticks
* 10 x ears corn
* 2 tbl Sugar
* 1/4 cup milk
* 1 pch salt
* corn oil for sauteing
* 1/4 cup sour cream for garnish

Directions To Prepare Venezuelan Corn Cakes - (Cachapas)
*Remove kernels form husk of corn using a sharp knife.

*Puree in a blender.

*Mix in the Sugar, milk, and salt.

*Heat griddle to medium heat, lightly coat with canola oil.

*Spoon mixture onto hot griddle to form "pancakes" of your desired size.

*Cook for 2 minutes on each side.

*Garnish with sour cream.
