CHICKEN AND PEAS PILAF

Ingredients Needed For CHICKEN AND PEAS PILAF
* 2 large onions, sliced
* 1 1/2 cups uncooked rice
* 3 tablespoons butter or margarine
* 3 cups chicken broth
* 1 10-ounce package frozen green peas
* 2 cups coarsely chopped cooked Chicken or Turkey
* salt, ground black pepper and a pinch of saffron

Directions To Prepare CHICKEN AND PEAS PILAF
Cook onions and rice in butter until onions are transparent. Stir in broth, Peas and Chicken. Season with salt, pepper and saffron. Bring to a boil. Stir once or twice. Lower heat to simmer. Cover; cook 15 minutes or until rice is tender and liquid is absorbed. Fluff lightly with fork.
