CHICKEN AND RICE MANDARIN

Ingredients Needed For CHICKEN AND RICE MANDARIN

* 3 broiler-fryer breasts, skinned and halved
* salt, ground black pepper, and paprika
* 2 tablespoons butter or margarine
* 1/2 cup chopped Onion
* 1/2 cup chopped celery
* 3 cups cooked rice
* 1 11-ounce can mandarin orange segments, including juice
* 1 8-ounce can sliced water chestnuts, drained
* 1/2 teaspoon poultry seasoning

Directions To Prepare CHICKEN AND RICE MANDARIN

Combine prunes and sherry in small bowl. Set aside.
Cook Bacon in 10-inch skillet until crisp. Remove Bacon; set aside. Pour off fat; return 1 tablespoon to skillet. Add rice, broth, salt, lemon peel and pepper. Bring to a boil. Stir in vegetables, cover, reduce heat and simmer 15 to 20 minutes or until rice is tender and liquid is absorbed. Add Chicken, Bacon, prunes and sherry to rice mixture. Cover and place over low heat for 3 to 5 minutes or until heated through. Garnish with celery leaves, if desired.
