Healthy Cajun Beans and Rice

Ingredients Needed For Healthy Cajun Beans and Rice
* 1 tbsp vegetables oil
* 1/2 lb Turkey Sausage or other low-fat smoked Sausage, sliced into ½-inch thick slices
* 1 med Onion, chopped
* 1 med green bell pepper, chopped
* 2 cloves garlic, minced
* 6 cups cooked rice
* 15 oz can kidney beans, drained and rinsed
* 15 oz can navy or great Northern beans, drained and rinced
* 14 1/2 oz cans cajun-style stewed tomatoes
* 1 tsp oregano
* 1/2 tsp hot pepper sauce
* 1 cup thinly slice green onions.

Directions To Prepare Healthy Cajun Beans and Rice
Heat oil in large skillet over medium-high heat until hot. Add Sausage, Onion, green pepper and garlic. Cook, stirring 7 to 10 minutes or until Sausage is browned and Onion is tender. Add rice, kidney beans, navy beans, tomatoes, oregano and hot pepper sauce. Cook and stir 2 to 3 minutes more until well blended and thoroughly heated. Sprinkle with green onions and serve immediately.
