Creamy Old Fashioned Rice Pudding with Apricot Sauce

Makes 4-6 servings



Ingredients Needed For Creamy Old Fashioned Rice Pudding with Apricot Sauce
* 3 cups cooked rice, cooled
* 1 12-ounce package frankfurters, sliced
* 1 1/2 cups sliced celery
* 3/4 cup chopped Onion
* 1/2 cup chopped pimientos
* 1 11-ounce can condensed Cheddar Cheese soup
* 1/4 cup Mayonnaise
* 1 tablespoon prepared mustard
* 1/4 teaspoon ground black pepper
* 3 hard-cooked eggs, sliced
* Salad greens (optional)
* Sliced hard-cooked eggs for garnish (optional)
* apricot Sauce:
* 1 cup orange juice
* 1/4 cup white wine or dry vermouth
* 1/4 cup Sugar
* 1/2 cup dried apricots
* 2 tablespoons orange flavored liqueur


Directions To Prepare Creamy Old Fashioned Rice Pudding with Apricot Sauce
#Combine rice, Sugar, salt, nutmeg, milk and vanilla in greased 1-1/2-quart baking dish.
#Bake pudding uncovered in 325 degree oven 1-1/2 hours.
#Stir rice mixture every ten minutes during the first hour.
#Cool pudding to room temperature; it will thicken as it cools.
#Refrigerate until chilled or overnight. Serve with apricot Sauce.
#apricot Sauce: Combine orange juice, wine and Sugar in small saucepan over medium heat; bring to a boil.
#Add apricots; stir and let stand one hour. Puree apricot mixture in blender.
#Stir in liqueur; refrigerate until ready to use.
