Easy Rice Pudding Pie with Fruit

Makes 6 to 8 servings.



Ingredients Needed For Easy Rice Pudding Pie with Fruit
* 1/2 cup Sugar
* 1/4 cup all-purpose flour
* 3 cups milk
* 2 eggs, slightly beaten
* 2 cups cooked rice
* 2 teaspoons grated orange peel
* 1 teaspoon vanilla extract
* 1/2 cup whipped topping
* 1 prepared graham cracker crust
* 1 11-ounce can mandarin oranges, drained
* 2 kiwi fruits, sliced
* 1 banana, sliced


Directions To Prepare Easy Rice Pudding Pie with Fruit
#Combine Sugar and flour in 2-quart saucepan; gradually stir in milk.
#Cook, stirring constantly, over medium heat until thick and bubbly, about 10 minutes.
#Reduce heat; cook, stirring, an additional 2 minutes. Remove from heat.
#Gradually stir in 1 cup hot mixture into eggs.
#Return egg mixture to saucepan; bring to a slow boil.
#Cook, stirring, 2 minutes. Remove from heat.
#Stir in cooked rice, orange peel and vanilla.
#Cover and chill in refrigerator.
#Fold in whipped topping; pour into crust.
#Just before serving, garnish with oranges, kiwi fruit and banana
