STIR-FRIED RICE WITH PORK

Ingredients Needed For STIR-FRIED RICE WITH PORK
=
* 1/2 cup sliced green onions
* 1/2 cup diagonally sliced celery
* 2 cups diced roast Pork*
* 2 tablespoons peanut oil or vegetable oil
* 3 cups cold cooked rice
* 1 cup sliced water chestnuts
* 1/8 teaspoon ground black pepper
* 1 egg, slightly beaten
* 3 tablespoons soy sauce
* 2 eggs, beaten
* 1 1/2 cups cottage cheese
* 2 tablespoons grated Parmesan cheese
* 2 cups grated Cheddar Cheese, divided


Directions To Prepare STIR-FRIED RICE WITH PORK
=
Cook onions, celery and Pork in oil until vegetables are tender crisp. Do not overcook. Add rice and water chestnuts. Combine pepper, egg and soy sauce. Stir into rice mixture. Cook, stirring, 2 to 3 minutes or until heated.
