Saffron Paella Salad

Ingredients Needed For Saffron Paella Salad
* 3 tablespoons white wine vinegar
* 1 tablespoon olive oil
* 1 clove garlic, minced
* 1/2 teaspoon ground white pepper
* 2 1/2 cups cooked rice (cooked in chicken broth and saffron), cooled to room temperature
* 1 cup cooked Turkey breast cubes
* 1 cup peeled and deveined cooked Shrimp
* 1/2 cup diced red bell pepper
* 1/2 cup cooked green peas
* 1/3 cup chopped Onion
* 1/3 cup sliced ripe olives
* lettuce leaves

Directions To Prepare Saffron Paella Salad
Combine vinegar, oil, garlic and pepper in large bowl; mix well. Add rice, Turkey, Shrimp, red pepper, Peas, Onion and olives; toss lightly. Serve on lettuce leaves.
