Polynesian Chicken Salad

Ingredients Needed For Polynesian Chicken Salad
=
* 4 cups cooked white or brown rice (cooked in chicken broth), cooled
* 2 cups cooked Chicken breast strips
* 1 14-ounce can mixed Chinese vegetables, drained
* 1 1/2 cups pineapple tidbits
* 1 cup diagonally sliced celery
* 1/2 cup sliced green onions
* 3 tablespoons diced pimiento
* 1/2 cup Mayonnaise
* 1 clove garlic, minced
* 1 teaspoon minced fresh ginger
* 1/2 teaspoon ground black pepper
* 1/2 teaspoon dry mustard
* 2 tablespoons soy sauce
* lettuce leaves
* 1 3-ounce can chow mein or rice noodles
* additional soy sauce (optional)


Directions To Prepare Polynesian Chicken Salad
=
Combine rice, Chicken, Chinese vegetables, pineapple, celery, onions and pimiento in large bowl. Whisk together Mayonnaise, garlic, ginger, pepper, mustard and soy sauce. Stir into rice mixture; toss lightly. Serve on lettuce leaves; garnish with noodles. Serve with additional soy sauce, if desired.
