RICE DRESSING (DIRTY RICE)

Ingredients Needed For RICE DRESSING (DIRTY RICE)
* 2 tablespoons all-purpose flour
* 2 tablespoons vegetable oil
* 1 medium Onion, chopped
* 1 cup chopped celery
* 1/2 cup chopped green pepper
* 2 cloves garlic, minced
* 1/2 pound lean ground Beef
* 1/2 pound lean ground Pork
* 1/2 pound Chicken giblets, chopped
* 1 1/2 teaspoons salt
* 1/4 to 1/2 teaspoon ground black pepper
* 1/4 to 1/2 teaspoon ground red pepper
* 1 cup chicken broth or water
* 3 cups hot cooked rice
* 1 cup sliced green onion tops

Directions To Prepare RICE DRESSING (DIRTY RICE)
Blend flour in oil in Dutch oven or large skillet (preferably cast iron). Cook over medium heat, stirring constantly, until it is deep brown. Add Onion, celery, green pepper and garlic; cook until vegetables are tender. Stir in Beef, Pork, giblets, salt, black pepper and red pepper. Continue cooking until meat loses its color. Stir in broth; cover and simmer 25 minutes. Stir in rice and Onion tops; cook 5 minutes longer. Mixture should be slightly moist.
